Time Flies

The first day of Kindergarten for the Bean was a big tear-jerker success!  While mommy had an emotional breakdown hard time seeing her Bean walk away from her and into the care and guidance of a new school, new friends and even more independence, the Bean was totally excited about all the new adventures she would be having.

The day started out like this.

Then we arrived at school. (She’s loving showing off her new back-pack!)

The Bean’s teacher allowed all the parents to stay while she read a book projected online Kindle application to the classroom.

The Bean and her teacher wished us a good afternoon and then I was off. My sweet little girl didn’t even look back as I left; believe me, I checked. The moment I got into my car looked like this:

Ok, maybe I’d stopped sobbing dried most of my tears at this point.

The Bean is such a joy. I just don’t understand where the time has gone. Diapers, bottles and binkies are items that while totally foreign to me at this point, seem to have only left my life yesterday. She has had so many firsts that completely revolved around mommy’s care: first smile, first roll-over, first word, first step…but that time is drawing to an end. Her next round of firsts (like today) will revolve less and less around mommy and more and more around friends, teachers, coaches and the like. That is the way it should be, but wow, it’s tough!

I found the following excerpt from a post on Facebook that I wrote on August 28, 2009, just over two years ago. It is amazing that the same thoughts were going through my head as I looked in on her sleeping just last night.

“The Bean is about to turn 4. I have no idea how that happened. I get so frustrated with her sometimes…but all I think when I look in on her sleeping late at night is, “STOP GROWING!” I wish I could stop time…even in this frustrating stage she is in. I already have to share her, and miss out on SO much…where has the time gone?! Why do I waste ANY of it being upset and frustrated with her?! I understand now all the things my own mother told me, I look forward to Grace’s next stage in life, preschool, kindergarten, school…it will all be an adventure…but just for now, can’t she just stay little?!”

Now, that frustrating terrible 3’s stage is long gone, and I find myself with a young girl who is growing into her own way of thinking, sharing and loving. I am so proud of my smart, little Bean.

Watch out world!

A Foodie’s First Attempt

Welcome Back! As you can probably tell from the pictures on the About page, I do not have a fancy camera. (In fact, I do not have a camera at all…thankfully The Sweetheart allows me use of his.) I also do not plan on purchasing one in the near future. My household is definitely on a budget and my next fun purchase for myself is slated to be clip-less petals and shoes for my road bike. I will take low quality pictures of them when I buy them! : ) Anyway, I apologize in advance for the lower quality photos that I post, like the one of me cooking below, which I think was taken with my phone (not a IPhone, smartphone, it’s barely even a cell phone).

Moving on, from the title of the post I hope you can gather that I am posting my very first food post! Yay! Here is an idea of what you can look forward to in my food posts:

  • I am an everything-in-moderation-atarian (Also, I make up words from time to time).
  • There are two things I will not eat. Olives and Muscles.
  • There is one thing I cannot eat. Raw Onions. Next time I do, I’ll post a photo of what happens. Yikes!
  • I will not post everything I eat on the blog. I may post one meal per day, usually dinner the morning after, because that’s when I have time to do it. I hope it will give you ideas for your own dinner, tonight!
  • For the time being, I will only post pictures and descriptions of our meals. If you would like ingredients/recipes/directions, please email me and I will be happy to provide you with it! As time goes on, and the demand is there…I will get more detailed.
  • I love to eat healthy, delicious meals. I try to make sure my grocery cart is about 90% whole, unprocessed foods. That said, I also love to snack. Chips/Salsa and Pita Chips/Hummus are my favorite.
  • It is only in the last 5 years that I’ve learned to cook, and it has been the most amazing experience! If I can do it…
  • I truly believe that anyone, on any budget, can make healthy, wonderful meals for themselves, their families and their friends!
  • The Sweetheart is an amazing cook too and I’d say we make an awesome team in the kitchen. It’s one of our favorite things to do together and is so rewarding!

We drink wine when we cook! Nice beard, yes?

  • You don’t have to have the exact same tastes as the people you’re cooking for, or with, to make an amazing meal that everyone will enjoy. The Sweetheart and I enjoy many of the same type of meals, but he can be satisfied with meat and potatoes or, simply meat. (Yes, really…I’ll post a picture of his next bowl of meat. A disclaimer will follow.) For me, if  I have any meat, it is most often the smallest portion on my plate. We each have our areas and our meals seem to come together quite well!
  • If you continue to cook and discover new food choices, you will slowly build an arsenal of meals that makes it hard to even think about going out to eat. It’s hard for any restaurant to beat the meals we prepare, especially for the price!

That’s about it, feel free to ask any questions you may have! Now on with the show! Dinner last night was delicious beer-can chicken, which came off the grill in about 1 hour looking like this.

Cucumber (from our neighbor) and Tomato (from our garden) salad with blue cheese dressing.

And Roasted Fingerling Potatoes…yumm!

We paired dinner with a chilled Chardonnay. Perfection, and easy! It was a great end to a big day. Today, another BIG day. It is The Bean’s first day of Kindergarten. I have no idea how that happened…I’m pretty sure it was just yesterday when she learned to walk. Pictures to follow of the fun first day! Have an amazing morning!
