Easy Eggplant Parmesan and a Lonnnng 5k

Good morning! It’s gorgeous here this morning and I am loving it!

We started off our day today with a delicious egg on a bagel.

This has become my favorite weekday breakfast! It only takes about  5 minutes start to finish, and is super easy to eat on the go. Check back Friday for a link to where I learned to make this deliciousness! Yum!

Yesterday, after work, I finally ran my 5k timed run. Here are my results:

Obviously, to meet my goal of 27 minutes for the 2011 Turkey Trot…I have a lot of work to do. That’s ok…that’s why we set goals, right? I’m totally excited to do the same timed run each week and post my progress! The excitement of race day usually takes about one whole minute off, so I’ve got just over 2 months to cut 4 minutes.

Why the long time today? It was hot. I haven’t run much lately. I took three walking breaks. That’s where I’m at…and I’m totally ok with it! It’s a blessing to be out there training for something…un-injured and ready for the challenge!

After my run, I made a quick stop at home to play with our Sweet Boy, and then headed over to Care Bears house. She knows that the Sweetheart works late on Mondays, and invited me over for her famous Eggplant Parmesan…and I can say…amazing! Loved it! I didn’t snap a photo of it last night…but I brought some home for the Sweetheart…who turns out had already eaten…so this is what I get for lunch today! Lucky!!

Care Bear’s Eggplant Parmesan is quick and easy…and delicious!

  • One Large Eggplant: Cut up into circles, sprinkled with salt and pepper, and grilled until tender-crisp
  • Your favorite organic marinara sauce, I love Giada’s. You can find it,  here.  HINT: you can make a batch of sauce when you have time and store in the freezer for whenever you need it!
  • Freshly grated Parmesan cheese, as much as you’d like

Layer small rounds of eggplant in a baking dish, then marinara sauce, Parmesan. One more time. Eggplant, marinara, Parmesan. Bake in a 350 Degree oven until the cheese is bubbly and golden brown. Serve on top of your favorite whole Wheat Pasta.

I promise…it will make your heart soar, as the Sweetheart says, like a hawk! Thanks for a great evening Care Bear!
