Tomato Bliss

So, I love tomatoes. Let’s get that out of the way, if you didn’t already know…and have I got a salad for you to make tonight!


I love tomatoes regardless of color, size or shape…


…and in, or with, most anything!

I’ve had a couple of emails from readers asking for my tomato salad recipe, and I always have to ask, “which one?” I must have at least a dozen! Yumm!

Anyhoo…here is my all-time favorite. The fun thing is, to add to the yumm-factor…add whatever else you may have a love for!

I promise, this salad will go with just about anything you’re looking to cook tonight! Happy experimenting!

Tomato Bliss Salad

  • 2 pints small tomatoes, any variety, halved. I’m loving pear tomatoes right now.
  • 1 Handful of Fresh Basil, any variety, chopped or broken into very small pieces.
  • 1/2 cup Pine nuts, toasted.
    • Dressing
      • 4 Tbsp EVOO
      • 2 Tbsp Balsamic Vinegar
      • 1Tbsp Lemon Juice
      • 1 Clove Garlic, Minced
      • 1 tsp Salt, or to taste
      • 1 tsp Black Pepper, or to taste
      • 1/4 tsp Red Pepper, for a kick!
  1. Add Tomatoes, Basil and Pine Nuts to a bowl, mix well. HINT: Do not add pine nuts until just before serving. They get soggy.
  2. Whisk dressing ingredients together and pour over tomatoes and basil.
  3. Toss and Enjoy

Micro-Basil, Rosemary and Thyme pot. The Rosemary’s not doing too well…but holy basil!


I’m loving the micro-basil that the Sweetheart planted. It’s pretty much pre-chopped…perfect!

Toast your pine nuts over med heat, just until you can smell them.

Roll them around in the pan every few minutes during the process, and they’ll turn out perfectly golden brown!

Dressing Ingredients

Whisk together for a perfect vinaigrette.

I promise once the weather gets cold, I have other salad ideas too. For now, I hope you’ll put up my tomato obsession!

What foods can you not put down this time of the year? I’m a little sad because I know the tomato harvest season is already slowing down. This is sad for me…but I’m sure you guys are excited to see something other than tomatoes on the blog!

I just got back from breakfast with the Sweetheart and now I’m off for a 5 miler, which I’m a little nervous about (it’s been awhile)…but I’ve got a marathon relay coming up and I can’t let the team down right?!
