After These Messages

Excuse my all-but absence today. I am in a food/travel/Snake River Brewery Oktoberfest/road-trip/just got back from my first run in a week, coma. I promise to be a better blogger again, tomorrow.

Until then, this is the only treatment available I can think of. It’s like heaven if you need to get back on track after a week of fun! (i.e. I haven’t seen a vegetable in 4 days.) There are dozens of ways to make this beauty, but the following is my favorite. Simple. Perfect.

 The Green Monster

  • 1 frozen banana. (cut it up first, trust me!)
  • 1 large handful of raw spinach
  • 1/2 cup milk (any kind, your choice. almond is awesome!)
  • 1/2 tsp vanilla extract
  • 1 Tbsp sunflower butter
  •  2 ice cubes

 Add everything together and blend.

mmm….yes please!

The first time I tried this, I was totally reluctant. I am no longer. The Green Monster is an amazing way to get multiple servings of veggies/fruits in, they taste amazing, and I’ve found they truly boost my energy if I make one each day.

HINT: Add a handful of blueberries, and it turns into a kid-friendly purple-berry monster.

DISCLAIMER: You will get looks from your co-workers and others when they see you with this. I once had a guy I work with walk in (at 7:45am) with a 40 oz Coke, a Taco John’s breakfast burrito AND a donut, tell me that my monster was the, “most disgusting thing he’s ever seen.” I smiled. I thought that was the better approach. 🙂
