Raspberry French Toast Bake

Happy Friday everyone! Another Friday brings another Breakfast Feast Friday recipe…my attempt to fill your mind with ideas for a weekend breakfast for yourself, your family, or a brunch get-together! (or…in some cases, a random dinner.)

Today’s yumminess comes from one of my favorite TV chef personalities, Giada De Laurentiis. I cut her recipe in half, and changed up the fruit because raspberries are so delicious when baked…and because they were on sale!

Raspberry French Toast Bake

  • 2 eggs
  • 1 cup whole milk
  • 1 tsp vanilla extract
  • 1/4 cup maple syrup, plus extra for serving
  • 1 teaspoons ground cinnamon, plus 1/2 tablespoon
  • 1/8 teaspoon salt
  • 1/2 lemon, zested
  • 4 (1-inch thick) slices of sourdough bread, cut into 1-inch cubes
  • 1 cup fresh raspberries
  • 1.5 tablespoons granulated sugar

NOTE: This works best if the bread is dried out for a day or two first. If you’re like me, and don’t think that far ahead, just cut up your bread into cubes and place on a baking sheet. Dry bread out in a 250 degree oven for about 15 minutes. Works like a charm!

Preheat oven to 350 Degrees. Grease 9×9 baking dish with butter.

In a large bowl, add eggs and beat well.

To the eggs, add milk, vanilla, syrup, cinnamon, salt and lemon zest.

Add bread cubes and stir until everything is well coated.

Gently, add raspberries and combine.

Add mixture to the buttered baking dish.

In a small ramekin, make a cinnamon/sugar topping by combining sugar with remaining cinnamon. Sprinkle this mixture over the top of the bread cube mixture.

Bake for about 40 minutes, or until top is golden brown and filling no longer jiggles.

Drizzle with syrup, and enjoy.

So delicious!

  2. Ooohh, I’m a sucker for french toast! I love this creative spin, though! I’m a huge fan of raspberries but rarely use them in my cooking. I’m thinking this just might have to be breakfast for me sometime this weekend! 🙂
