Jumping On-board

Happy Wednesday! Thank you for all the awesome comments yesterday! I so appreciate all the messages asking me to post what I have planned for Thursday earlier, but the truth is, if I sat down to write it right now…you’d end up with a blank post tomorrow. I am honestly completely overwhelmed by the process, the journey, and all the amazing support. I just need a day to process it all, so I can give you an honest account of the last few days, instead of a blubbering, emotional, and ridiculous account of it . You are all seriously, freaking amazing. Thank you.

Moving on to a much lighter topic (and more yummy) …

…after reading (and reading, and reading) about overnight oats from the likes of my favorite foodie bloggers, (Michelle, Teri, Tina, Angela,  and Kath, just to name a few) I decided to jump on-board.

I know, I’m way behind.

For those of you still in the dark, Overnight oats simply means putting oatmeal, liquid, and anything else you may like into a jar or bowl overnight. As it sits, the liquid is absorbed into the oats, and you get to open your fridge to breakfast in the morning, ready to go!

For my mix, I used the following, but check out some of the above links for tons of ideas!

Overnight Oats

  • 1/2 cup oatmeal (not the quick-cook kind)
  • 3/4 cup almond milk
  • 1/4 tsp salt
  • 1/4 tsp vanilla extract
  • 2 strawberries sliced thinly
  • 1/2 banana sliced thinly

 

Add everything to a bowl (or a mason jar, for easy travel in case you’re taking it to work)

Shake it up a little bit, cover, and stick it in the fridge.

In the morning, add your favorite topping. Mmm…sunflower butter.

 

Mix it up again, and dig in! I enjoyed mine at work, as a second breakfast mid-morning.

I. Am. Hooked.

I can’t believe I waited so long to try overnight oats! I’m excited to mix it up a little bit and try different varieties!

On a fitness note, I ran my weekly timed 5K yesterday after work. I can’t believe the actual 5K is basically a month away! Where does the time go?!

I can honestly say that I felt great during this entire run. Hard work really does pay off. Remember my detox plans? Just look at the difference between last week and this week. Health/wellness/fitness. Truly, an amazing trinity.

 

I had a lot on my mind during the day…and this run was just what I needed. Running is amazing that way isn’t it? If you push yourself hard enough…you don’t even have the physical ability to think about all the other stuff going on in your life. It’s such a wonderful escape.

*sigh*

When was the last time you thought, “I should have tried this a lot sooner!” ?

  1. For me, my last “I should have tired this a lot sooner” moment was when I started dancing again after a five year absence. That was about a month ago and I’m starting to feel a lot better. I still have a long way to go to get back in shape, but I walk with a spring in my step again for the first time in years!

    Congrats on shaving off some time! You’ll be all set for your 5k in no time!

  2. Hmmmm, I’m intrigued. I think I’ll go put some oats together now. I wonder if I’ve got a mason jar…
