Cheesy Deliciousness, Yes Please!

Happy Friday! Is it just me, or has it been a crazy, crazy week? It was Thursday before I knew it, and I hadn’t even thought about Breakfast Feast Friday! I knew I needed to get something amazing out to you, so I decided to make the following creation as dinner last night. I think it will make a perfect weekend breakfast for you! It is a very serious contender for my favorite Breakfast Feast Friday recipe. Yumm!

Cheesy Egg Tower

(Like Eggs Benedict, only different better!)

  • 1/4 cup butter
  • 1/8 cup all-purpose flour
  • 1 cup milk
  • 1 cup shredded cheddar cheese (or whatever shredded cheese is in your fridge, full fat please!)
  • 1 tablespoon grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/16 teaspoon garlic powder
  • 1/16 teaspoon dried thyme
  • 1/16 teaspoon pepper
  • 1/16 teaspoon coriander
  • 1 teaspoon Dijon mustard
  • 1 tablespoon white vinegar (for egg poaching)
  • 3 eggs, poached
  • 6 thin slices of Black Forrest ham, warmed
  • 1 ripe avocado, sliced
  • 1 small tomato, thinly sliced
  • 2 English muffins, split and toasted

Directions

  • In a large saucepan, melt butter. Stir in flour until smooth; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; stir in the cheeses, mustard and seasonings. Cook and stir until cheese is melted; keep warm.
  • Place 2-3 in. of water in a large skillet with high sides; add vinegar. Bring to a boil. Break cold eggs, one at a time, into a ramekin or small bowl; holding the ramekin close to the surface of the water, slip each egg into water. Cook, uncovered, until whites are completely set and yolks begin to thicken, about 4 minutes.

  • Place Black Forest ham, avocado and tomato on each muffin half. With a slotted spoon, lift each egg out of the water and place over avocado. Top with cheese sauce.

Makes 3 amazing servings.

On Monday, I let on that I’ve been thinking a lot about the direction for the blog. I really appreciate all the comments and emails regarding that post! I have decided that I’m going to take weekends off from posting anything new, at least for the time being. Last weekend’s unplugged-time was so beneficial, and allowed me to really think about what I wanted to write in the next week…instead of just making sure I got something posted.
