Weekend Roundup

Welcome back to the workweek. It has, once again, come very quickly and I am missing the weekend already! This last weekend was perfect. Lots of fun, but not a lot to do…just what I needed!

Here’s a little recap!


Friday: Yoga. It’s quickly becoming my favorite week-ending activity.

Saturday: 3 mile hill run. Felt good, but I could tell that I needed a rest day. Sore shins and feet.

Sunday: Hour long hike with Dixie. Perfection. More on this later!




Lots of pumpkin-carving fun! Everyone got really creative, especially the Sweetheart…who carved a moose-o-lantern!

Pumpkin seed roasting…creole spice perfection.



An amazing hike on “M-Hill” with Dixie. These hiking/biking/running trails are just minutes from our house. I can’t believe this was my first time on them!

We finished Sunday off with a giant crockpot full of of the Sweeetheart’s fresh Pheasant with wild rice soup. It was perfection, and I’ve got more for lunch today! Bonus!

We had a seriously fun, relaxing and family-filled weekend. It was spectacular!

Tonight, I’ve got some serious studying to do…and something to put in the mail. More on that tomorrow.

  1. It’s not a meal, but I’m obsessed with cider. Hot cider, cold cider, it doesn’t matter, as long as I get my nice, fresh (hopefully!) apple cider I’m in fall heaven. And if I can drink it surrounded by beautiful fall colors as the leaves change, I’m all the happier.

    • Wowza…now I’ve got a serious cider craving! Sounds delicious!

      • I’m about to make it worse. I went to get some this morning at Dunkin Donuts and they were out. So I had to get ice tea instead. Only they gave me iced coffee. What a way to start off the day. I didn’t get my cider and I got the wrong drink (I don’t like coffee). So I’m treating myself to a LARGE later today at a different Dunkin Donuts. I’m determined to get my cider in!

  3. I know this is going to shock you, but SOUP! All soup. All the time. I sometimes eat soup for breakfast. haha

  4. Your fall weekend sounded great fun. I have a special cider recipe too. It’s very simple and all cooked in one deep frying pan. Serves 2.
    You will need 6 Pork Sausages, 1 large onion, 1 large cooking apple, 1 bottle sweet cider, 1 beef stock cube, 1 tbsp flour to thicken sauce. Salt & Pepper.
    Brown a pack of your favourite sausages, remove from pan, set aside and keep warm. Remove most of the fat from the pan.(It’s bad for your health!!) Add chopped onion. Add peeled, cored and roughly chopped apple. Cook gently for couple of minutes. Add flour to thicken. Add crumbled stock cube and stir in, still cooking gently. Then slowly add the cider stirring gently until you have a nice sauce with pieces of apple in it. Season to taste with salt & pepper. Put the sausages back into the cider sauce, cover and simmer for about 15 minutes until cooked. Serve with mashed potato.
    Other options. During cooking you can add herbs or a tbsp of tomato ketchup to the sauce, if you like. Enjoy!!

    • In America…Cider is an spiced apple drink. I was very confused when I first read this…haha. Could you explain what cider is in the UK? …it sounds delicious!
